The Estate's Wines

On the southern slope of Monte Quarin, 200 meters above sea level, a historic vineyard dating back to 1938 gives life to single-varietal wines and two distinctive blends, alongside two Charmat-method sparkling wines. The amphitheater of vines that traces this slope holds one of the oldest plantings in Friuli, from which the noble grape varieties of Tocai Friulano, Ribolla Gialla, Malvasia Istriana, Merlot, and Refosco dal Peduncolo Rosso are grown.

From these varieties we obtain our single-varietal wines and the blends Collio Bianco and Collio Rosso “Barone di Schoenberg.” Alongside them, the vintage Extra Brut Ribolla Gialla and the Theresia Rosé Brut.

Each label is born of the same “ponca” soil, but follows a different path in the cellar: soft pressing and temperature-controlled fermentation for the whites, maceration and long barrique aging for the reds, double fermentation for the sparkling wines. It is this variety of method, applied to a single hillside, that gives the estate’s range its identity.

The Whites

The white grapes are hand-harvested and gently pressed, then left to settle naturally before temperature-controlled fermentation and aging on fine lees, which can last from a few months to nearly a year, depending on the label.

The Reds

The reds come from a longer maceration on the skins and age for about thirty months in French oak barriques, where malolactic fermentation also takes place, followed by further aging in the bottle

Sparkling Wines

The sparkling wines follow the Charmat method: after an initial fermentation in steel or concrete, the second fermentation takes place in an autoclave, with lees aging that defines the finesse of the perlage.
