A single-varietal Charmat-method sparkling wine made from Ribolla Gialla grapes from the historic 1938 vineyard, harvested early to preserve their freshness. Brilliant straw yellow with an extremely fine, long-lasting perlage, elegant on the nose with floral notes and hints of reinette apple; dry, fresh, and well-balanced on the palate.

Training system: Guyot with 6/8 buds

Harvest: manual, in small crates
Vinification: white winemaking with soft pressing, natural settling for about 36 hours, first fermentation at controlled temperature (18°C) in cement tanks, aging on fine lees for about 4 months with batonnage; second fermentation from mid-January for at least 60 days at 12°C, maturation on lees for a further 5 months, bottled without oxygen exposure
Ribolla Gialla Extra Brut
t presents a brilliant straw yellow color, enhanced by an extremely fine, long-lasting, and creamy perlage. On the nose it is elegant and refined, with delicate floral and fruity notes, in which reinette apple stands out in particular. On the palate it proves dry and smooth, fresh and flavorful, with excellent drinkability and great overall balance.
Perfect as an aperitif, ideal with crostini and canapés, it pairs beautifully with raw fish and seafood dishes. It should be served at 4/6°C and, when stored horizontally, away from light and at temperatures not exceeding 18°C, it keeps its qualities intact for 3–4 years.
