Since 1971, the year we acquired the estate, we have paired the grape harvest with the picking of cherries, pears, and figs, growing ever more captivated by olive cultivation. From our Tuscan varieties and the Bianchera comes an extra virgin oil that brings the Adriatic aromas of Trieste and Istria to the table.

The olive trees, which have always shaped the landscape of this land, grow sheltered from the cold northern winds and caressed by the Mediterranean breezes rising from the south. From this balance, year after year, comes a fragrant and aromatic oil with a delicate hint of artichoke, which we carefully bottle in 250 ml sizes.

Our Extra Virgin Olive Oil

Olive growing in this area has deep roots in the past: hence our choice to plant new groves alongside the existing olive trees, to revive local olive cultivation. The estate is family-run, and both pruning and harvesting of the olives are strictly done by hand. The harvest is delivered within 48 hours to the nearby mill in Cividale and cold-pressed, without heating or the addition of water: a method that preserves the phenolic compounds and aromatic substances responsible for its distinctive scent.

The Quarin extra virgin oil is a blend of the Tuscan variety and the Bianchera, the latter native to northeastern Italy. Grown on the marl-sandstone hills of the Quarin, it benefits from a mild climate and cool, well-drained soil. It yields a medium-intense fruity oil, with notes of almond, artichoke, and freshly cut grass.
